MELOJEL cornstarch is a food-grade starch sourced from dent corn. It creates a robust gel upon cooling a cooked mixture. When hot, cooked MELOJEL dispersions have a smooth, short texture, setting into an opaque gel when cooled at a 7% concentration. However, gelled products made with MELOJEL starch are not suitable for prolonged or cold storage as they may release water due to syneresis.
